Green coffee is actually the unroasted green coffee bean (Coffea arabica), which is extracted from the ripe red fruit of the coffee tree, an evergreen tree or shrub native to Ethiopia. When roasted, the beans turn brown and lose a significant amount of chlorogenic acid or CGA.

Although green beans are ground immediately after drying, green coffee retains a very high content of chlorogenic acid. Only the highest quality green coffee beans that contain high amounts of this acid are suitable for the beneficial effects of chlorogenic acid on our body.
